Many of the commodities moving in air freight must be protected against sudden changes in temperatures. The tern perature of a jet freighter's cabin is ideal to maintain perishables in peak condition; but the increase in the shipment of perishables by air required new strides in ground handling to protect cargoes from spoilage induced by marked differences in temperatures often encountered on the ground at points of origin and destination. To meet these needs the airlines have, at some cities, special equipment and facilities ranging from heated vans to temperature controlled holding rooms in which 100,000 pounds of perishables can be held at one time.
